SOJA
La
soja ó soya (Glycine max) es una especie de la familia de las leguminosas (Fabaceae)
cultivada por sus semillas, de medio contenido en aceite
y alto de proteína.
El grano de soja y sus subproductos (aceite y harina de soja, principalmente)
se utilizan en la alimentación humana y del ganado. Se comercializa en todo el
mundo, debido a sus múltiples usos.
El
cultivo de soja es un factor muy valioso si se efectúa en el marco de un cultivo
por rotación estacional, ya que fija el nitrógeno
en los suelos, agotados tras haberse practicado otros cultivos intensivos. En
cambio, el monocultivo de soja acarrea desequilibrios
ecológicos y económicos si se mantiene prolongadamente y en grandes extensiones
La
soja varía en crecimiento, hábito, y altura. Puede crecer desde 20 cm hasta 2
metros de altura y tarda por lo menos 1 día en germinar.
Las
vainas, tallos y hojas están cubiertas por finos pelos marrones o grises. Las hojas
son trifoliadas,
tienen de 3 a 4 prospectos por hoja, y los prospectos son de 6-15 cm de
longitud y de 2-7 cm de ancho. Las hojas caen antes de que las semillas estén
maduras. Las flores grandes, inconspicuas, autofértiles nacen en la axila de la
hoja y son blancas, rosas o púrpuras.
El
fruto
es una vaina pilosa que crece en grupos de 3-5, cada vaina tiene 3-8 cm de
longitud y usualmente contiene 2-4 (raramente más) semillas
de 5-11 mm de diámetro.
La
soja se da en varios tamaños y la cáscara de la semilla es de color negro,
marrón, azul, amarillo, verde o abigarrado. La cáscara del poroto maduro es
dura, resistente al agua y protege al cotiledón
e hipocótilo (o "germen") de daños.
Si se rompe la cubierta de la semilla, ésta no germinará.
La cicatriz, visible sobre la semilla, se llama hilum (de color negro, marrón,
gris y amarillo) y en uno de los extremos del hilum está el micrópilo, o
pequeña apertura en la cubierta de la semilla que permite la absorción de agua
para brotar.
Algo
para destacar es que las semillas que contienen muy altos niveles de proteína, como las de soja, pueden sufrir desecación
y todavía sobrevivir y revivir después de la absorción de agua.
